A/C works fine around town. Last 2 trips 4+hours, the A/C has stopped working. Interstate speeds 70+ MPH could this be a low gas issue? Other theories?

Do you mean that the air flow through the vents decreased? Or that such air was not as cold? Did you pull over and visually see if the AC clutch was engaged?

"works fine around town" suggests it is not a low gas issue, but that statement is so general to be almost meaningless. This system uses pressure sensors (not switches) and a micro processor for climate control.
All in all not DIY friendly. I would suggest having it looked at by a shop.
